(Citrus sudachi)
Originating in Japan, the Sudachi is a cross between a Yuzu and another Japanese citrus like a Koji or Tachibana orange. The tree is a good grower, getting anywhere between 3 – 5m tall in favourable conditions. The leaves are a lovely dark green with a distinct petiole at the base, while the branches can be rather spiky in places.
The fruit is not usually eaten off the tree, but rather used as flavouring in place of lemon or lime. It’s considered an indispensable companion to certain dishes in Japan where it’s served in thin slices as a garnish. If travelling through certain prefectures of Japan, you may be able to find a huge range of Sudachi flavoured items, like beverages, ice pops, even alcohol. If you’re looking for a different citrus to use, the flavour and zest of the Sudachi would be an amazing place to start.
It’s a small to medium sized round fruit, about the size of a golf ball, that turns from green to yellow as it ripens, but the fruit is usually picked while it’s still green.
